ROLLÈ DI MESCIOZIN
Scroll down for English – faites glisser pour la version française

MESCIOTUSK  ROLL
This is a nice and tasty recipe for meat lovers directly for the planet Retra.
Mesciotusk is a mammal. The ancestors discovered it as soon as they stepped on the new planet. Its size is about the size of a few months old calf. Its hair is intense blue and on the hair you can see some bright pinkish highlights. The ancestors who saw the animal the first time and captured it (that was not dufficult for the animal is easy to tame)  used to speak the language that on Earth was spoken in that country named France, this is why the animal got this unusual mane for in French highlights is mèches.
The ancestros put also the word tusk into the name for the animal has two blue tusks.
Mesciotusk's meat is blue and Dost tells us that on the table the roll is beautiful because of the blue, yellow and pink colours.
On Earth we don’t have blue meats, and of course the dish will not be as beautuful as it is on Retra Terra. We advise to use tender veal meat to this recipe.
If you want more information about quarisa, and vovier please look the spigoorat and zek rolls.
Lungingic is similar to our scallion.

Ingredients:

700/800 grams of a meat roll of mesciozin (25/28 ounces)
6 slices of prosciutto
6 voviers
1 lungingic
 1 quarisa
3 eggs
1,5 of red vine
Some kitchen string
1 vegetable cube soup

With the 3 eggs make two omelettes.
Open the meat and spread it on the kitchen counter. Spread the omelettes over the meat. Cut the omelettes if necessary to cover all the meat.

Lay over the omelettes the prosciutto slices.

Roll the meat with the eggs and the prosciutto.

Tie the roll of meat with a kitchen string.

Put the meat roll in a saucepan with voviers, sliced and miced lungingic

Add red wine and the vegetable cube soup.

Let the wine boil for a minute then lower the flame to the minimum, and cover the saucepan.
Let it simmer for two and a half hours on a very low flame, add some water if necessary and turn the meat once in a while.

Shut the flame and let the meat cool off.

When the meat will be cold, cut the string, and slice the meat roll.

Put the slices back into the saucepan and warm it on a low flame.

Serve warm.

Servir chaud.

Callacallà con gingic
scroll down for English - faites glisser pour la version française

Cipolle 3-4 (meglio 2 cipolle e 2 porri piccoli)
Olio di oliva
Prezzemolo
Farina di grano 2-3 cucchiai
Passata di pomodoro 150 ml.
Sale
Concentrato di pomodoro 1 cucchiaio
Peperoncino a piacere

Callacallà with gingic

Dost found this recipe in a very old book that belonged to the incestor Gordiano Lupi. Gordiano lived in this country that was shaped as a boot, before leaving for his space journey. His hometown was called Piombino, and it was next to the sea. He loved to eat fish so he collected all his mother’s recipes in a a book and he cooked them once in a while. The book is very interesting to read as Gordiano, next to the recipes, also wrote many little short stories that tell the Earth town’s life as it was many many years ago.

Dost sent us this recipe as he found it, and we publish it as it arrived to us from another galaxy. Stockfish does not exist on Retra, so Retrans use another fish called Callacallà, it’s a green singing fish. The ancestors named it after a famous Earth singer  as soon as they heard it singing for the first time.

Juicy stockfish with onions

I just talked about it in my  fish dish souvenirs through the eyes of a highlander. I had to give space to the stochfish recipe that was  a very "economic" dish 30 – 35 years ago. It was valuable, and cheap, besides being very good and tasty… It didn’t need any fridge (many years ago in the village nobody had one). If  cooked in a sauce, it could be served with cornflower polenta, and was  excellent for fast days such as Good Friday.

Stockfish  600 g . (21 ounces)
3- 4 onions. Better if you use two onions and two leeks
Olive oil
Parsley
2-3 tablespoons of flauer.
Crushed tomatoes 150 ml (5 ounces)
Salt
1 tablespoon of tomato paste.
Hot peppers (as you wish)

Put the stockfish into water at least for one night and let the salt fade away. Change the water several times.

Cut the fish into pieces (not too small), dry it with a clean cloth and put in into the flower.

Let the fish become blond in a  saucepan with oil. Dry it from the oil with paper and let it aside.

I

n  another saucepan put the oil and let the miced onions get blond, add some salt,

then add the fish, the parsley, and the hot pepper. Let it cook for a few minutes...

... then add  the crusched tomatoes, and the tomato paste. Cook on a low flame for 15 minutes.

It doesn’t have to dry, so you may add little water if necessary, and black olives if you like.

Serve warm. You may serve it with cooked cornflower (polenta).
