MARMELLATA DI PROFUMEL
Scroll down for English – faites glisser pour la version française

Ingredienti
1 kg di polpa di profumel
2 limoni
1 mirlo

PROFUMEL PRESERVE

Dost just sent us this recipe for a very special  fruit preserve: Retran profumel are a scented fruit  that never loose their perfume even if they are cooked.
Profumels look like huge apples, their skin is of a sweet tender pink, the pulp is bright red and their scent can be felt from a distance. They have no seeds and to reproduce the tree you must plant a whole fruit, that soon will become a beautiful tree. Actually profumel trees are spectacular because the pink fruits hang from the blue branches af if they were Christmas balls. The scent is also miracoulous, it seems that whoever smells it is instantly cured from any lung disease.
I would love to see the trees and the fruits myself, but here on Earth we can just imagine them.
For this recipe we advise to use  cantaloups on our planet and to take out the seeds to make the preserve. If you want more information about mirlo, please look into the “miros with surprise” recipe.

Ingredients
1 kg of profumel pulp (2 lbs and 2 ounces)
2 lemons
1 mirlo
600 g. od sugar (20 ounces)

Skin the profumels and cut the minto little pieces. Put the pulp into a big saucepan
Skin the mirlo and cut in into little pieces. Add to the profumels.

Grate the lemon skin and squeeze  out the juice, add to the rest of the fruit.
Add sugar.
Mix and cover the saucepan, let it mash for 24 hours, stir a few times.

Boil the fruit then lower the flame to the minimum and cook for 90 minutes with no cover. Stir frequently.

Blend the fruit

Cook for another 30 minutes stirring frequently.

Pour the preserve into glass jars and close the jars tight with metal lids.

Let the jars cool off, they should produce a little noise, and become a little hollow in the center of the lid. The preserve will be then sterilized.

Delicious on bread or toasts!

Tourner souvent.

Battre les fruits.

Cuire  encore pendant 30 minutes.
