SOUFFLE DI SOFOMORI

La ricetta del soufflé ha origini antichissime e il suo nome
viene da una lingua che gli antenati parlavano in un Paese chiamato Francia. Il
nome di questo piatto, in effetti è il participio passato del verbo souffler,
che nell’antica lingua degli antenati, significava soffiare. Beh, il nome
sintetizza bene cosa avviene durante la cottura di questo piatto delicato e
bellissimo da portare in tavola: come per magia il calore del forno “soffia” sugli
ingredienti e li fa gonfiare!
Il segreto di
ogni soufflé è quello di montare sempre almeno una chiara in più dei
corrispondenti rossi che si amalgamano all’impasto, di non aprire il forno
durante la cottura e di servirlo appena
sfornato, perché è un piatto delicato e con facilità si sgonfia.

per 3 – 4 persone
6 cuori di sofomori (anche congelati)
4 tuorli d’uovo
5 bianchi d’uovo.
50 g. di burro
4 cucchiai d’olio
2 cucchiai di farina
100 g. di formaggio non cremoso
1 spicchio d’aglio
½ dado vegetale
1 bicchiere di latte
Qualche cucchiaio di acqua se necessari
Tagliuzzare i sofomori.
In una pentola far sciogliere il burro con due cucchiai di olio,
aggiungere ¼ di dado.
Girare e poi aggiungere la farina, girare
Aggiungere il latte e girare fino a quando la salsa si sarà
rappresa. Spegnere il fuoco
Aggiungere il formaggio e girare
Aggiungere i sofomori tagliuzzati e girare
Potete passare il composto al frullatore
Preparare una teglia da forno con i bordi alti e foderarla con
la carta forno
Montare i bianchi delle uova a neve.
Amalgamare i bianchi alla salsa con i sofomori delicatamente, un
cucchiaio alla volta
Versare nello stampo foderato e tagliare i bordi in eccesso
della carta da forno.
Infornare per 40 minuti a 180°
Servire ben caldo!

The soufflé recipe has very ancient origins,
its name comes from a language the ancestors used to talk in a country named
France, and in fact is the past participle of the verb souffler, that meant to blow. Actually the name synthesize what
happens when you cook the soufflé in the oven: the heat waves magically blow
and inflate the ingredients!
The secret
for a very well blown up soufflé is to beat one more egg white than the yolks
you put into the basic cream, and not to open the oven during the coking time. Also soufflé should be brought to the table
as soon as it comes out of the oven because it’s a delicate dish and might “deflate”
in a flash.

For 3 – 4 people
6 sofomoro's hearts
(you may use frozen ones)
4 yolks
5 egg whites
50 g. of butter (2
ounces)
4 tablespoons of
ruvus oil
2 tablespoons of
flower
100 g. of no cream
cheese (3, 5 ounces), shredded or cut into little pieces
1 garlic clove
½ of a vegetable cube
soup
1 glass of milk
A few tablespoons
of water if necessary
In a saucepan let
the butter melt with 2 tablespoons of
oil, add ¼ off a cube soup
Stir and then add
the flower, stir again
Add the milk and stir untile
the sauce is done. Shut the flame.
Add the cheese and
stir.
Add the sofomoros
and stir
You may blend the sauce if you want
Add the yolks and
stir
Prepare an oven
dish with high borders and sheathe it
with baking paper
Beat the egg whites
very firm
Add the egg whites
to the sauce with cheese and sofomoros delicately on tablespoon at a time.
Pour the sauce with the egg whites into the oven dish
and cut the exceeding baking paper
Bake at 180° (350°
F.) for 40 minutes
Serve hot!

La ricette du soufflé a des origines très anciennes, son nom

pendant la cuisson: la chaleur du four souffle sur les ingrédients qui se
gonflent comme par magie!
Le secret d’un
bon soufflé gonflé se trouve dans les
blancs des œufs: il faut toujours au moins monter un blac de plus que les jaunes,
et aussi il ne faut pas uovrir le four pendant la cuisson. C’est un beau plat,
mais il est dèlicat!

Ingrédients
Pour 3 – 4 personnes
4 jaunes d’œufs
5 blancs d’œufs
50 g. de
beurre
4 cuillères d’huile
de ruvus
2 cuillères de
farine
100 g. de
fromage pas crémeux
1 gousse d’ail
½ cube de bouillon végétal
1 verre de lait
Qualques cuillères d’eau si necessaire
Couper les sofomoros en petites pieces.
Dans una casserole faire fondre le beurre avec 2 cuillères d’huile,
ajouter l/4 de cube de bouillon.
Tourner,
ajouter la farine et tourner à nouveau
Ajouter le lait et tourner pour que la sauce prenne. Eteindre
le feu.
Ajouter le
fromage et tourner
Ajouter les
sofomoros et tourner
Vous pouvez passer au mixer si vous voulez
Ajouter les jaunes d'œufs et tourner
Préparer un plat à four avec des bords hauts et le couvrir de
papier à four.
Monter les
blancs en neige très ferme
Ajouter les blancs battus au reste des ingrédients avec
délicatesse.
Verser le
composé dans le plat à four et couper les bords
Cuire au four
pendant 40 minutes à 180°
Servir bien
chaud!
