SFORMATO DI PASTA BRIZ BRIZ

            Questa ricetta che Dost ci ha appena inviato ha delle origini antichissime. Sembra infatti che un popolo originario di un mare chiamato Mediterraneo, già cucinassero questo piatto per deliziare i palati di imperatori e uomini politici di rilievo. Era il piatto preferito di un eminente letterato e uomo politico chiamato Cicerone.

            Trovando su Retra il terreno fertile per coltivare il grano e i vovier, gli antenati confezionarono con facilità la pasta fatta in casa, di cui Dost ha promesso di inviarci molto preso la ricetta. Il grano briz di Retra ha praticamente le stesse qualità del grano terrestre, ma ha un colore blu scuro, di conseguenza la farina che se ne ricava è di un bel blu notte e i fogli di pasta saranno anche loro blu.

Sulla terra non abbiamo purtroppo della farina di questo colore e il piatto risulterà molto meno scenografico, ma altrettanto buono.
Se volete saperne di più su gingic e vovier vi preghiamo di consultare la ricetta della spigoorat, per la quarise la ricetta dei riccioli di pasta. Il sedsed è un’erba aromatica che somiglia al nostro sedano. Si consiglia di utilizzare la carne di vitella invece dello zek. 

Ingredienti

250 g. di sottili fogli di pasta briz briz
800 g. vovier a pezzetti privati di pelle o due scatole di vovier in scatola
300 g. di macinato di zek
200g. di parmigiano
½ litro di latte
¼ di gingic ben tagliuzzato
½  quarise tagliuzzata
Qualche foglia di sedsed
100g. di burro
½ bicchiere di olio di ruvus
1 e ½   dado vegetale
100 g. di farina bianca

 



In una casseruola mettere il macinato di zek, il gingic, la quarise, le foglie di sedsed e il dado vegetale.











Cuocere su di una fiamma media girando in continuazione per 5/7 minuti.










Aggiungere i vovier e girare bene. Abbassare la fiamma, coprire la pentola e lasciare cuocere per 30 minuti girando di tanto in tanto.







Mentre il sugo si cuoce in un’altra pentola fare una salsa besciamella. Far sciogliere il burro con l’olio girando e aggiungere mezzo dado vegetale. Quando il burro sarà sciolto, aggiungere la farina e girare.

Aggiungere sempre girando il latte piano piano, fino ad ottenere una salsa morbida e vellutata. Se dovesse risultare troppo dura, aggiungere altro latte.



Prendere una teglia da forno e rivestirla con la carta forno.













Stendere sulla pasta uno strato di salsa besciamella







Sopra la salsa besciamella stendere uno strato di sugo di vovier














Condire con abbondante parmigiano








Ripetere l’operazione stendendo un secondo strato di pasta, di besciamella, di sugo e di parmigiano










e continuare così fino ad utilizzare tutta la pasta. 

Infornare a 180° per 40 minuti.







Servire ben caldo

BRIZ BRIZ PASTA TIMBALE

            Dost just sent us a recipe with very ancient origins. The ancestors said that people living in ancient times around the Mediterranean Sea used to prepare it for important emperors and politicians. The legend affirms that it was the favourite dish of a very well known politician and man of letters  named Cicero. 
            The land was rich on Retra, wheat and vovier  grew abundant, so the ancestros could easily make home made pasta. Dost promised to send us very soon its recipe. Briz wheat on Retra is a special kind of cereal that has the same qualities as Earth wheat, but its color is dark blue. Blits flour is of a beautiful dark blue, and pasta made out of it, of the same color of course.  
On Earth we just have plain white flower, and the dish will be very good but not as beautiful!
For more information about gingic and vovier please look at the spigoorat recipe, for the quarise at the pasta curls.  Sedsed is an aromatic herb similar to our celery.
For this recipe you can use ground veal instead of zek.

 Ingredients
250 g. of thin slices of briz briz pasta. (10 ounces)
800 g. of crusched voviers (30 ounces)
300 g. of ground zek (11 ounces)
200g. of parmezan cheese (8 ounces)
½ liter of milk (1/4 of a gallon)
¼ of minced gingic
½  minced quarise
A few leaves of sedsed
100g. of butter (4 ounces)
½ glass of ruvus oil
1 and ½   of vegetable cube soup
100 g. of white flower (4 ounces)
 



In a saucepan put the ground zek, the gingic, the quarise, the sedsed leaves and one vegetable cube.










Cook on a medium flame  always stirring for  5/7 minutes.











Add vovier and keep stirring. Lower the flame, cover the saucepan and let it cook for 30 minutes, stirring once in a while.


As the sauce gets ready, in another saucepan make a béchamel sauce.  Melt the butter in the oil stirring, add ½ cube soup.

Add flour and stir.

Add the milk little by little always stirring, until you get a nice velvety sauce. If the sauce is too hard, just add some more milk.  








Spread baking paper on an oven dish.  

Spread one layer of briz briz pasta over the baking paper and cover the bottom of the dish.









Spread over the pasta one layer of béchamel sauce








Spread over the béchamel sauce one layer of vovier sauce












Sprinkle with parmesan cheese











Repeat these steps with a second layer of pasta over the parmesan cheese, then the béchamel, the vovier sauce and the cheese  








Keep on doing these layers until you use all the pasta.


Bake at 180° for 40 minutes (350°F.).







Serve hot.

PLAT DE PASTA BRIZ BRIZ AU FOUR
            Cette recette que Dost vient de nous envoyer a des origines très anciennes.  Les ancêtres affirment qu’un peuple originaire d’un pays au bord d’une mer appelée Méditerranée, cuisinaient déjà ce plat pour charmer les empereurs et les hommes politiques. Il paraît que ce plat était le préféré d’un important homme de lettres et politicien appelé Cicéron.
            Sur Retra les ancêtres trouvèrent un terrain très fertile pour cultiver le blé et les voviers, il préparerent facilement  les pâtes faites à la maison, et Dost nous a promis de nous envoyer la recette très tôt. Le blé briz de Retra a les mêmes qualités du blé terrestre mais une couleur bleue foncée. Donc la farine bliz est aussi bleue et les pâtes bien sûr seront bleues!
Sur la Terre nous avons seulement de la farine blanche et le plat sera savoureux mais beaucoup moins beau!
Si vous voulez avoir des informations sur le gingic e les vovier veuillez consulter la recette de la spogoorat et pour la quarise les boucles de pâtes. Le sedsed est une herbe aromatique  qui ressemble au céleri. Vous pouvez aussi utiliser du veau au lieu du zek.  

Ingredients

250 g. de minces feuilles de pâtes de briz briz
800 g. de voviers en morceaux
300 g. de viande hachée de zek
200g. de parmesan
½ litre de lait
¼ de gingic mincé
½  de quarise mincée
Quelques feuilles de sedsed
100g. de beurre
½ verre d’huile de ruvus
1 et ½  cube de bouillon végétal
100 g. de farine blanche

 



Dans une casserole mettre la viande hachée, le gingic, la quarise, les feuilles de sedsed et 1 cube de bouillon.












Cuire sur un feu moyen en tournant pendant 5/7  minutes.









Ajouter les voviers et continuer à tourner. Baisser la flame et couvrir la casserole. Laisser cuire pendant 30 minutes an tournant de temps en temps.





Pendant que la sauce cuit, dans une autre casserole faire une sauce béchamel. Faire fondre le beurre et l’huile en tournant et ajouter la moitié du cube de bouillon. Ajouter la farine et tourner.  

Ajouter le lait petit à petit en tournant jusqu’à abtenir une sauce veloutée. Si la sauce est trop dure ajouter un peu de lait.  

 



Prendre un plat à four et le couvrir de papier à four.  

Etaler une couche de feuilles de pâtes sur le papier. 











ensuite une couche de sauce bèchamel,











et ensuite une couche de sauce de vovier.












Enfin mettre du parmesan.













Répéter l’opération avec une seconde couche de pâtes, de sauce béchamel, de sauce de vovier et de fromage










Continuer à faire des couches jusqu’à utiliser toutes les pâtes. 

Mettre au four à 180° pour 40 minutes.




Servir bien chaud.
